Based on our review, the District is willing to consider issuance of a conditional waiver to this facility to allow the specified grease removal devices (GRDs) in lieu of the gravity grease interceptor requirement for this facility. Such a waiver would be contingent on meeting the following conditions: • A GIRD (Goslyn specified in submitted plans) is provided for the 3- compartment sink and pre -rinse sink. • Indoor grease removal device(s) are installed pursuant to all manufacturer requirements including flow control devices and proper space for maintenance and inspection access; • Kitchen and /or facilities maintenance staff are trained on the operation and maintenance of the grease removal device(s); • The grease removal device(s) are maintained pursuant to all manufacturers recommendations including, but not limited to: • The solids basket is checked /emptied daily (when in use); • The waste grease container is checked /emptied daily (when in use); • Under no circumstances will the settled solids and /or floating fats, oils and grease (FOG) contained in the grease removal device exceed 25% of the hydraulic depth of the device; • The full contents of the unit(s) are removed prior to settled solids and /or floating FOG reaching 25% of the hydraulic depth of the device; • The operation of automatic devices (plug, stopper ball, heater.) are inspected /verified on a weekly basis (when in use); • A log is maintained of all grease removal device service and maintenance activities, including daily, weekly and monthly activities; • Signage is to be posted in clear view of kitchen staff stating /illustrating the required Kitchen Best Management Practices (BMPs) requirements; • Space is reserved for a future outdoor, gravity interceptor installation in the event that the grease removal devices and Kitchen BMPs prove insufficient; • CCTV inspection of the lateral downstream of the grease control devices is conducted after six (6) months of operation and the results of the inspection are to be provided to the District. 628W. 19th Street / Costa Mesa, CA 92627 -2716 • (949) 645 -8400 / fax: (949) 650 -2253 Protecting our community's health and the environment by providing solid waste and sewer collection services The Costa Mesa Sanitary District is the owner of the public sewer system serving your business and is responsible for keeping the sewer system functioning properly. The State of California has required the District to implement a Fats, Oils, and Grease Control Program to prevent blockages in the sewer lines that can cause overflows and spills (FOG Program). Chapter 7.09 of the District's Operations Code establishes regulations for the District's Fats, Oils, and Grease Control Program. As part of the District's FOG Program, inspection of all food service establishments (FSEs) in the District's service area are conducted on a routine basis to provide FOG Program education and verify compliance with FOG Program rules and regulations. Where serious or repeated non - compliance issues are identified during these inspections, elevated enforcement actions may be implemented, which could include revocation of the conditional waiver and requiring installation of a District approved gravity grease interceptor. Similarly, integral to the District's FOG Program, routine CCTV inspections of sewer lines are conducted to identify sources of FOG discharge into the sanitary sewer system. Where evidence of FOG discharge is identified during these inspections, elevated enforcement actions may be implemented, which could include revocation of the conditional waiver and requiring installation of a District approved gravity grease interceptor. Upon receipt of formal acknowledgement of these conditions from the owner /operator of the Wayfarer Restaurant facility, and property owner (if different), the District will issue approval of this conditional waiver.
